Today no matter what I looked at , my stomach only had eyes for some Chinese food. And now that I am on P3 I get to have cauliflower and there for a whole new world has been revealed unto me. ( but at the same time , I AM TERIFIED , we will get back to that later). Now back to food. I wanted some fried rice and had a craving for some sweet teriyaki chicken , and now you know you want some too.
 
So I started by ricing my cauliflower. When I first read that I was like " Say whaaaaat ?". and like a folio I completely didn't get any pictures of this process. So let me explain it real quick.
1. remove leaves and stems from cauliflower and place the florets in a food processor ON PULSE ONLY until its all gone . (it will look like rice). and what the French do you do if you don't have a food processor ?.. Sorry but you will have to grate those bad boys with your cheese grater and if you don't have a cheese grater , I am assuming that you don't eat cheese, and there for we can no longer be friends and you can not make this recipe.. HAHA jk we are still friends, but I do not  know how you would gate it up otherwise .. Im sure dollar tree can hook you up . Ok
2. place in microwave safe bowl and cook for 8 minutes DO NOT ADD WATER.
and BAM that is it. you got rice .
Now let start.
 
Dice up 8 oz of  chicken and set aside
scramble 3 eggs and set aside
 
Sauté up some onion and garlic with 1 TBLS of olive oil
 
 Then make your teriyaki sauce . 2TBLS of Liquid Aminos , fresh ginger, 2 tbls of water  and 1 tsp of stevia in the raw. mix well
 Add you chicken to the pan with the onions and garlic add a bit of water once they start to caramelize and then add HALF of your teriyaki sauce , cook and set aside out of pan .
       then add your 2 TBLS of Olive oil , HEAT and then once hot add your rice(2 cups) and the remaining of   your  sauce and fry up, cook on one side for about 5-7 minutes on medium  heat and then toss and repeat until cooked to your likening
 once cooked, add some green onion and place your scrambled eggs in the center and start to scramble them up
                                                      look at them sexy scrambled eggs
                        once scrambled and in nice little pieces and combine with your fried rice
                     proportion out your rice and then toss your chicken back in to reheat it
  add your chicken on top of your rice and garnish with green onions . This recipe served 2 with some rice left over and we are STUFFED. hopefully this sticks longer than your traditional stuff.lol.

FRIED CHICKEN(not really)

Ok so Ive been asked about my chicken strips. I love them .. MY SON loves them and now everybody I know LOVES them..
 
So lets start.. Yes I know  I have a seasoning addiction. In my eyes it is WAY better that grease.
SO I have 1 WASA cracker in my bullet and then you add to YOUR liking any of the above. * Morton salt contains a caking agent so I don't use it anymore * I use McCormicks.
                                          See how much seasoning I use ... Don't hate ..lol
                                     and now blended into a fine powder( best for coating )
         and here is my 4 oz of chicken . and you can see I had many crumbs left over, I just dipped my chicken in and it stayed , the moisture from defrosting it was all I needed.
                            and then cooked up some more for my son and for his lunch
                                                 and they are baked at 400 for 20 minutes
 and served with Daikon faux potatoes and apple pie recipe that my friend Karissa showed me how to make . If you plan ahead you can divide your cracker and use the other half for the cobbler topping .

WTD?..What the Daikon Radish that is...

SO honestly at first I could not even pronounce this little guy, but thanks to my friend ad co-worker Emily and a quick lesson I say it in my sleep and dream of ways to make it AMAZING..
I am going to show you 2 recipes, are you ready ?
OK lets start with MASHED DAIKON faux Potatoes. Yes you just read that right.
I started with 12 oz of RAW daikon and I boiled in sea salt for about 20 WITH THE LID ON or until you can pierce it with a fork.
 
 
 Then I strained all the water, well as much as possible . They pretty much are a water vessel.
 Then you ADD your yummies.. I wanted Garlic rosemary . *I was advised that Morton sea salt has a caking agent, so yeah I don't use it anymore and use Mccormicks..* Also be sure to read labels, I usually use fresh , but was out of garlic . But this brand works good and is just garlic..
 Then you BEAT those bad boys .. Beat them REAL GOOD ..hahahaha
 **NOT PICTURED** But after you mix them , place them in a cheesecloth or heavy duty paper towel and drain all the extra water that you will get ..Then place them back on the scale and  divided by my 3 servings so 7.7 divided by 3 is...
                   2.6 ounces actually .. BE sure to heat these back up in a pan , only good nice and warm.. so what did I eat with these GARLIC MASHED DAIKON .. well a complete southern dinner was in order of course ...
 FRIED(not really fried ) CHICKEN and APPLE PIE !! well crust-less apple pie actually ..
 and what do Y'ALL think I did with my 3rd serving ?.. Placed next to my 1oz meatballs for lunch the next day .. COMFORT HEALTHY FOOD AT ITS FINEST .... delish ..
 OK OK so we had MASHED POTATOES , BUT WHAT ABOUT FRENCH FRIES ?.. Well I got you covered .... well almost ..
BUT FIRST a huge shout out to this PAN .. I freakin love it .. cooking without oil,butter or grease ?.. NO WAY ?.. but YES friends ... YES WAY ... and I love it and now own 3 !!
 SO lets start with my ingredients for steak fries .. the glass jar contains paparika
 SO I first tried to bake them, they taste good , but not so much crispy , they would seem to burn before they would dry out and crisp up .. Don't get me wrong I ate the shiz out of them and they were good.. But I MICHELLE was NOT satiFRIED until they were crisp... So I continued ..
 That sexy OrGREENics pan I mentioned earlier ... DID THIS ,,, they actually started to crisp up and brown ,,
 and I added my pre cooked Fried chicken breast from the night before to heat up and crisp, for my Spicy Ranch crispy chicken sandwich ..Man I was getting excited for my fries.. LOW AND SLOW BABY .. LOW AND SLOW .. ok maybe medium low .. but yes.. I'm learning patience ?.. Imagine that? They were better than baked , a tad crispier , but not yet perfect ... until we meet again Daikon ..
 So I then prepped my toppings.. All together I only used 4 oz of veggies that's including my fries , toppings and homemade BBQ sauce.. 2oz of daikon , .5 of tomato and cucumber(thinly sliced) lettuce and onion weighed together to 1 oz and .5 of my BBQ sauce .. I added the dill weed to my cucumbers to give it a fresh ranch flavor , topped with sea salt.. they were yumm
              placed my crispy chicken strips on my romaine , add my BFF Franks red Hot sauce

 Added my 4 oz of fruit and I made like Emrald and BAAAM dinner was DONE SON !!..

So today I almost could not wait to get home and write to all my soldiers!

Today on my way home I had one of the most amazing experiences in a long time. So I was at the bank making a deposit and like pretty much every other person , when we are waiting we go to facebook. I was not on since lunch , right after I posted my first page on my blog , so I was nervous and yet excited to see if anybody read it.

What happened next , I was not expecting.. SO MUCH SUPPORT.. saying that it was a nice read , inspirational and then the final comment from a lady I recently befriended on my Omni journey made this statement" Michelle, so amazing! Thank you ! Your going to bless us all! Hugs :)" .. My heart skipped a beat and before I knew it I was in tears , and actually I am now(in tears) just rethinking the experience . Me Bless people ?. And then it hit me .. I AM DOING THIS ... I haven't cheated and its been almost 2 weeks, I've made amazing choices AND its been almost 2 weeks.. Today I CHOOSE MYSELF before FOOD. I cant keep he tears back , because I realized for the first time that , I ACTUALLY believed it.. And ME, Michelle CAN help others, bless others to BELIEVE it too.

Believing ... is such a powerful word and FEELING . The knowledge of, and security of BELIEVING in yourself is powerful. I then instantly pictured myself actually enjoying a beach trip with my son and not having the feeling or negative thoughts that someone on this beach is thinking "wow a whale showed up on the beach , Do we push her back in or watch it flop all over the beach ?".

Those thoughts are just as bad as eating badly, to me they are poison and confirmation THAT I AM ACTUALLY THINKING THOSE THINGS and possibly believing them, no I AM BELIEVING THEM . AND today I did NOT.. It was grand.

And then since I worked all day , had a really rough morning , I was just going to reheat up my pre weighed and cooked chicken breast with some franks red hot sauce and throw that on top of some baby kale and spinach , eat an apple and call it a night. But Then I thought ... Ummm NO ... Make the time , this journey is about making time for things that will better ME and making better choices , I do give myself credit for not stopping to get a quick cheap dollar burger though . WHOOP WHOOP another VICTORY !

Sooooooo I made me some DELISH Chinese food, ok well Stir fry , but it was so good I swear I was in China and I thought I should hold some sort of ceremony or something. So here it is and I still used my pre cooked chicken and my meal took about 20 minutes start to finish . ARE YOU READY ?

OK so I placed my frying pan on the scale and added some diced onions fresh garlic .. yumm garlic
 Then my favorite type of mustard. .COARSE ..double yumm
 now my scale went from 1.3 to 1.7 I wasn't sure it I needed to weight it along with my veggies , but I wasn't going to risk it .. did you notice ?... No oil to sauté this sexy combo .. So what the French did I use?
 In the mean time I finished weighing out my remaining ounces of veggies 2.3 to be exact. yum Spinach .
 I then added some sea salt , pepper and just for giggles some ground ginger.. I think I may have a seasoning addiction..
 So still wondering what  I am using if not OIL to sauté my sexy little bunch of yumness ?.. WATER who would of guessed that you can sauté with water ?.. O water how I heart thee.
 O snap here is that pre cooked chicken that I weighed out and grilled earlier this week. Seriously a LIFE SAVER and not the processed hard candy type..(I grilled this chicken and seasoned with sea salt, pepper and rosemary)
 The secret into thinking that you are eating more than you really are is ... really thinly cut up chicken breast. My cooked 2.5 ounces REALLY got stretched with this dish..
 and then I added a dash of Braggs Liquid Aminos .. O How I covet thee.. TO FANTASTIC .
 O snap that looks like tooo much water , but its not . It will evaporate out and he flavor will remain in that sexy chicken breast.
 And now the weighed out spinach , the water combo will help wilt you spinach and be DELSIH
      And as you can see , it withers down to pretty much nothing , but still filling
                                                         and then you cook it down
                                                         Its coming together nicely ..
 TaDa ... my sexy chicken stir fry in under 20 minutes .. super easy and super AMAZING and FAST

Hello Friends

Ok well here  goes nothing.
 I am totally new to this so please bare with me. This is going to be a blog
that is just about me, my thoughts, my struggles, my triumphs, its going to be ME. My 100% REAL  story behind being obese and what I am doing to change it forever. This blog will be evolving right along with me and my journey.

Lets start by introducing myself. My name is Michelle, I am currently 29 , single mother and a cake artist. Ive been over weight for pretty much my entire life. Even though I grew up on a ranch , ate great homemade food and rode my horse pretty much every day, and if I wasn't on my mare I was out exploring and finding fox dens and actually TOUCHING them.( I still cant believe that I did  that).

I had my child young(18) and had a failed marriage, all before 25! I was an addict and not so great at making  choices and  that landed me in jail a few times.

Lets fast forward to a few years ago. My son saved me yet again. He wanted to go to church , so we went, and were baptized together on 01.01.11. I attended a Relief society activity and the lady taught a fondant cake decorating class and I was in love, which ultimately lead me to Oregon Culinary Institute an I graduated a pastry Chef.
 As I sit here typing this up , I realized that I have accomplished many things, Ive grown as a person and as a mother. But as a approach my 30th birthday, I realize .. I have one more battle to fight and this one will be the fight of my life. The fight to save my life, to enjoy my life, before its to late.

Sooooo the purpose of his blog is to share my BATTLE , my journey , share how I am making changes in my diet, and in my mind. To share recipes of amazing food that is still healthy, but delicious. I am still thinking of ways to interact with YOU and together we can win the battle.
Learn to embrace what is going inside ourselves and not turn to food. Learn to truly love ourselves , so that it is easier to make better choices. And in the end to hopefully gain knowledge , inspiration or just a laugh..
